Carbohydrates are organic molecules that serve as the body's main source of energy. They are classified as simple (sugars like glucose and fructose) or complex (starches and fiber). After digestion, most carbohydrates are converted to glucose, which fuels cells, muscles, and the brain.

Healthy carbohydrate sources include whole grains, fruits, vegetables, and legumes, which provide fiber, vitamins, and minerals. Refined carbohydrates like white bread, sugar, and processed foods cause rapid blood sugar spikes and offer little nutritional value beyond calories.

Carbohydrate needs vary by individual, activity level, and goals. Endurance athletes may need 3-5 grams per pound of body weight, while sedentary individuals may function well on 1-2 grams per pound. Low-carb and ketogenic diets restrict carbohydrates to shift the body's primary fuel source to fat.
